
The
New Zealand Bluff Oyster occurs throughout New Zealand but
commercial quantities are generally sourced only from the Foveaux
Strait and Tasman Bay. The Bluff Oyster has a minimum size of 57mm and
is dredged from waters with a depth of around 60m.

The Bluff Oyster is shelled and packed with its natural seawater into pottles each holding one dozen Bluff Oysters. The product is very popular within New Zealand and is also available for export in fresh or frozen form. The harvesting season typically runs from March 1st to August 31st.
