Rock Lobsters are landed year-round from the coastal waters of the North and South Islands and are prepared for export in Christchurch and Wellington. They are typically dispatched live by air to discerning markets around SE Asia, though whole frozen Rock Lobsters and frozen Rock Lobster tails are also highly sought-after in world markets. The flesh is firm textured, very white, and orange-tinged on the exterior surface.
Rock Lobster is a moderate resource yielding an annual national production of around 2,900 tonnes. Ngai Tahu are significant stakeholders in the fishery.
